I contacted Perlinger here in Germany because I thought it would be best to source locally and they told me to purchase it from the following website (craft-leather.de) which appears to be run by a family member. Pricing on there is €295 for a grade B hide or €350 for a grade A. The leather is also pretty thick, between 2.1-2.4mm, which would be fine if I had a splitter but I do not.

You can get bull calf from tannerie Carriat. They sell single skins and the prices are quite good. Hermes uses their skins for lots of bags.
Weinheimer and Perlinger are good for Togo leathers but I think you need some minimums.
If you message Carriat they can tell you the colors in stock to choose from.
All these skins come in at around 2.2/2.4mm thick but if you have a skiving machine you can split down the cut panels for your bag yourself without any problem. thats what i do.

I wish I had a skiving machine. That will be my next big investment.
I have been using a French skiver so far, but it is very time-consuming and can be quite difficult to get an even skive throughout.

Also A.A.Crack as a leathet distributor has a splitting service. their stock is HUGE. No Carriat tho. 😬
